From My Heart to Your Table: Farm-Fresh Lamb & Black Truffle Recipes
When Pete and I started working on the Truffle Farm, I never imagined how deeply this land would become part of my soul. What started as Pete’s family legacy has become our shared passion – second generation farmers still learning something new every season. Pete’s parents established the eco-friendly practices decades ago that we continue to honour today, nurturing our soil, our sheep, our sunflower fields, and of course, our precious black truffles.
This morning, I watched our sheep graze peacefully near the sunflower stalks while our Lagotto Romagnolo puppies played nearby. There’s something so grounding about this rhythm – the way everything on our farm works together in harmony. Our sheep not only help maintain our pastures naturally, but they also provide some of the most tender, flavorful lamb you’ll ever taste. It’s this complete farm ecosystem that makes everything we produce so special.
The Perfect Pairing: Our Salmon with Truffle & BBQ

When people ask me about the best way to enjoy our farm’s lamb, I always tell them it’s about respecting both the meat and the truffles. Our grass-fed lamb has such a clean, rich flavor that it pairs beautifully with bold seasonings. I’ve been experimenting with BBQ rubs and sauces that complement both the lamb and our black truffles.
Farm-Style BBQ Salmon with Black Truffle
Here’s my favorite way to prepare our lamb using a rub inspired by classic BBQ techniques:
Our Herb & Truffle Salmon Rub:
- 1/4 cup fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons fresh oregano, finely chopped
- 1 tablespoon garlic, minced
- 1 tablespoon lemon zest
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes (optional)
- 1-2 teaspoons fresh black truffle, finely grated
Instructions: Combine all herbs and seasonings in a bowl. Rub generously over lamb leg or chops, letting it sit for at least 30 minutes before cooking. The fresh herbs work beautifully with our lamb’s natural flavors, while the truffle adds that earthy depth that makes everything special.
Carolina Gold-Style Sauce (Farm Adaptation)

I’ve also adapted this mustard-based sauce that works wonderfully with lamb:
- 1 cup Dijon mustard
- 1/2 cup local honey
- 1/2 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- Salt to taste
Mix everything together and let it sit for at least an hour. The tangy mustard cuts through the lamb’s richness perfectly.
A Note on Sustainability
Using our truffles this way feels right because nothing goes to waste. Even the smallest truffle can transform an entire salad, and these other dressings help us make the most of everything we grow. The vinaigrettes keep well in the fridge for up to a week, and I often make double batches to share with neighbors.
Whether you’re making the truffle vinaigrette for a special occasion, trying our BBQ lamb recipes, or just wanting a simple salad to complement your meal, I hope these recipes bring a little of our farm’s spirit to your table. And if you’re looking for more salad inspiration to pair with any of these dishes, you can find our complete guide to farm-fresh salad dressings here.
