
Treasures from the The Truffle Farm: A Culinary Journey
When we planted our first truffle-inoculated oak saplings, we never imagined where this journey would lead. Now, as we dig up these aromatic treasures each season, we’re constantly inspired to create in our farm kitchen. These recipes share our favorite ways to bring the magic of truffles into everyday cooking. They’re the same dishes we serve to friends around our farmhouse table – simple yet special, just like the truffles themselves. We hope these truffle creations bring as much joy to your table as they do to ours.
Black truffle Panna Cotta
2 cups whipping cream
1 cup sour cream
1 tsp vanilla
¾ cup icing sugar
2 tbsp black truffles
6 grams gelatin mixed with 2 tbsp water stir until dissolved
¼ cup truffle honey
In a large pot combine the sour cream , vanilla and cream, stir in icing sugar
Bring mixture to a boil, remove from heat, add gelatin mixture
Pour into molds and allow to chill overnight, serve drizzled with truffle honey
Truffle Mushroom tart
1 sheet ready-roll puff pastry
1 cup sliced mushrooms
1 jar of porcini mushroom and truffle
2 tsp of oil from jar
75 grams of mascarpone
100g shredded parmesan
Juice and zest of 1 lemon
Cut pastry into 12 equal square
Sautee mushrooms in 1 tbsp of the oil from the truffle mushroom mixture.
Add mascarpone until it melts, add the mushroom and truffles
Cool mixture. Place 1 tsp of mixture on the puff. Fold into a triangle and seal edges. Place on a parchment covered baking sheet. Brush with beaten egg. Bake on 425 F for 15 minutes or until golden brown. Served on a bed of Arugula tossed in zest and juice of 1 lemon 1 tbsp of balsamic vinegar and shaved parmesan.
Whipped truffle cream cheese
1 block of cream cheese at room temp
2 tbsp sliced truffle in oil
½ cup of shredded parmesan
1 clove of garlic crushed
Mix all ingredients together in a stand mixer until fluffy

The Truffle Crunch Story
Tim and Nathalie from Yellow Deer Mustard stopped by our farm last fall during truffle harvest. Over a bottle of local wine, we got talking about mustard and truffles. “What if?” Tim said. Our black truffles, their Canadian mustard seeds – it was magic. We wanted something different: super grainy, intense, with that wild truffle depth that hits you right in the taste buds. After a few tries, they nailed it. Our Truffle Crunch isn’t just a condiment – it’s proof that good things happen when local producers put their heads together.
